All-in-One Breakfast in 90-minutes, life’s good!
The answer is YES!
You get the invite to an overnight at a friend’s camp, or maybe you just invited yourself for an overnight, grin—either way life’s good. Date is on the calendar!
And the texts start flying with excitement, first text — “I have spaghetti for dinner”, the 2nd text reads— “I can bring the salad” and I reply— “what about a breakfast casserole?” The response— “sounds yummy!” The fun begins.
The Why a Casserole?
It’s the perfect one-dish meal, that is easy to make, delicious to eat, and leaves no mess. It’s everything you desire for breakfast—ham, eggs, and cheesy potatoes, yum.
You will love this egg bake—breakfast casserole. It may just become your next favorite for overnight guests. They why, this casserole is so flexible with simple ingredients and easy to create. You can make a day ahead or assemble that morning. I have done both. You can change up the ingredients, I have done that too. And it’s no fuss, no mess, easy cleanup, just perfect for when you are traveling to a friend’s camp. Who wants to spend all morning in the kitchen, when you can enjoy a sip of coffee next to the lake.
The How
All you need is a casserole dish, a dozen eggs, 1 brick of cheese, 12oz of fully cooked breakfast ham slices, and tater tots. Assemble and bake that’s it, grin.
Breakfast Casserole
Casserole dish size 11x8, Serves 6-8 people
Ingredients
1 8oz brick of pepper jack cheese shredded (approx. 1 1/2-2 cups)
1 12oz package of breakfast ham slices (approx. 1 1/2 cups)
1 dozen eggs (12 eggs)
1/4 cup of water
1-2 cups of frozen tater tots (enough to cover the bottom of casserole dish)
Directions
Begin by layering the tater tots on the bottom of your casserole dish.
Dice your ham slices in about 1/4-inch cubes and grate your pepper jack cheese. This is where you can swap out ham for cooked sausage or bacon, switch up the cheese with cheddar or Swiss, or combine 1/2 cheddar and 1/2 pepper jack—you choose. Have fun with it.
Crack the 12 eggs in a large bowl, add your diced ham slices, your pepper jack cheese and 1/4 cup of water. Mix well.
Add the egg mixture to the top of the layered tater tots. You can bake immediately or make ahead for breakfast the next morning. I have made this casserole the morning of, and it was delicious. When it sits overnight the taters soak up the egg goodness and the texture is very potato like, equally delicious. Again, fit it into your schedule, you choose. It’s that easy.
If you are assembling ahead for the next morning’s breakfast, add plastic wrap and store in the refrigerator until the next morning.
Bake casserole at 350F for 1 hour and 20-minutes, or until knife inserted in the middle comes out clean. Then let set for 10-minutes while your toast your English muffins and serve up the orange juice. Enjoy! 😉
