What to create when you have ground turkey, fresh herbs and it’s a Sunday afternoon?
Sunday in our house means pasta with a tomato-based sauce. A few weeks ago, I had planned on making homemade tacos with my sourdough tortillas. But as life would have it, that did not happen for one reason or another—what did happen is Sunday arrived on time as usual, grin. Having ground Turkey on hand, herbs growing on the deck, I thought Sunday sauce, a meat sauce would be perfect for dinner. And there you have my Why-a seasonal, tasty Turkey Meat Sauce. 🤤
Ground turkey has become a favorite in my household. It’s light, fairly inexpensive, and a healthier choice. This tomato sauce was surprisingly good, made the same way I traditionally would make my Sunday sauce, with the addition of fresh herbs and grated cheese. Just perfect for a lighter version in mid-Summer. May you enjoy too.
Turkey Meat Sauce
Serves 4-6 people
Ingredients
3 tablespoons olive oil
1 small red onion, diced (from the garden)
3-4 cloves of garlic, minced (from the garden)
3-4 hot peppers (2 jalapeños and 2 hot cherry peppers from garden)
1 teaspoon of dried parsley
1 teaspoon of dried oregano
1 pound ground turkey (I use 93% by 7%, Aldi’s)
28oz Crushed No-Salt Tomatoes (Hunts brand)
3 fresh tomatoes (added for flavor and texture)
1/4 cup sliced turkey pepperoni, cut slices in half
1/4 cup freshly grated parmesan cheese
3/4 cup of fresh herbs (mostly basil, little parsley & oregano) torn into pieces
Salt and pepper

Directions
In a large stock pot, begin by softening your onions in olive oil on medium to low heat until translucent, this takes about 5-minutes.
Continue to build flavor by adding your peppers and dried herbs. Sauté in the onion/olive oil for another 3-4-minutes. Add garlic—only for 1-minute, just to soften.
Next add your ground turkey and fresh tomatoes. When turkey is brown, do not burn or overcook, finish by adding the remaining ingredients (crushed tomatoes, turkey pepperoni, herbs and grated parmesan cheese). Mix all ingredients together and begin to simmer on low. Taste—add salt and pepper, remember your taste buds know best.
Simmer on low with lid slightly covered for 2-3-hours, stirring every 30-minutes to ensure there is no burning.
Serve with your favorite pasta. We love rigatonis or cellentani from Barilla. That night we enjoyed the Turkey Meat Sauce with cellentani, delicious.
