Every Friday during the Lenten Season my husband and I try to omit meat. This means we usually plan our meals around a local Fish Fry. One Friday, while we were out grocery shopping, we planned on eating our breakfast out. But as luck would have it, we were running late and breakfast turned into a fabulous lunch at a local diner; the special of the day, you got it a “Fish Fry”. It was delicious.
After eating fish for lunch we had no desire to eat the same for dinner. One of my favorite side dishes for a great Fish Fry is old fashioned baked mac & cheese. You know the kind your grandmother use to make, baked with love, and bubbling goodness. Because we had fish for lunch, I was craving a baked mac & cheese.
