Chicken Cilantro Wonton Soup

Whip up some Chicken Cilantro Wonton Soup.
I thought it would be fitting to follow-up with how to leverage that homemade chicken bone broth you reserved and froze from the Rotisserie Chicken Noodle Soup post. My inspiration comes from a girl’s shopping trip to Trader Joe’s. Yes, my girlfriends and I, we love food, food and more food, mixed with a few glasses of wine.
This particular trip included Trader Joe’s, Wagmans and wine. We almost didn’t have enough room for the groceries. Come to think of it, not sure we could see out of the back window. I believe that’s a hazard, grin. Not to worry we made it home, for me to write this tale.
I may have to confess that I love grocery shopping. I lose myself in the produce section. I enjoy going to stores on vacation to find new ingredients, and ideas for my next creation. Now that I am retired, my husband and I have been joining each other on our shopping trips. It’s been an interesting experience. He loves his list and so do I. But that is where it ends. He is in and out, done. I tend to get lost in the grocery store, being distracted, reading labels, finding new things, and well, not so sure he is thrilled with me. We eventually learned how to shop together, he goes his way, I go mine, and we meet in the middle (at the check-out). We love it.

Chicken Cilantro Wonton Soup
Yields: 2-4 servings (we ate the entire thing, 😊)
Ingredients
1 package of Trader Joe’s Chicken Cilantro Mini Wontons (picture below) *
1 diced carrot (I used an organic carrot)
1/4 cup red onion diced (or what you have on hand)
1 tablespoon olive oil
3 sliced green onions (scallions), the white part is optional.
1 QT. Homemade Chicken Broth, or store bought is just fine (16 oz, 4 cups)
Salt and Pepper to taste
Lots of Love
Directions
In a 3 QT stock pan sauté the diced onion and carrot with olive oil until tender, about 3-5 minutes. Add your thawed chicken broth, I thaw mine in the refrigerator overnight. Bring to a boil, then add the frozen Trader Joe’s Chicken Cilantro Mini Wontons for 1-2 minutes. Done! That’s it. So yummy!
