Family In-Town
There’s nothing better than spending time with family! Especially when days are filled with card games, fishing and laughter.
Family also inspires meal prep, food cravings and snacks. Which is the inspiration for this week’s recipe—an Italian Style Chopped sandwich that was chopped into small bites, seasoned with a balsamic vinaigrette and deli-sliced hot pepper rings. It was my niece’s recipe. One of many delicious meals she and her husband created for us during their week stay. What a wonderful delicious week.
We miss them, we are separated by 3000 miles, time together is precious, something that we enjoy very much. We played cards every evening, keeping score, taking tally on who is the big winner, grin. We miss them. Oh did I say that already, smile.
My niece and I created sourdough cinnamon rolls, sourdough cinnamon bread—both a first for each of us. They came out amazingly well. She left with aunt Wendy’s sourdough starter in hand.
Today, as I reflect on all the fun we had, and organize my refrigerator for the week, I realized we had lots of half opened deli meats, zucchini, and several other fresh veggies ready to be eaten. Waste not, I had to create something—but wanted to keep it simple, like a 1-pot-meal.
Italian Deli Pasta
serves 6
Ingredients
1/4 cup extra virgin olive oil
1/2 red onion diced (about 2/3 cup)
1/4 cup diced sopresssata salami
1/4 cup diced peppered dry salami
1/4 cup diced black forest ham
1 red pepper diced
1 tomato diced
1 zucchini diced
3 cloves of garlic minced
2 tablespoons of dried parsley
3 tablespoons of minced hot peppers (I used my canned cherry, jalapeño and cayenne from last year’s garden)
added about 2 tablespoons of hot pepper juice from jar
1 can 28oz crushed tomatoes, not salt
1/4 cup of grated Romano cheese
little Romano cheese for garnish
freshly ground pepper to taste
Cooked pasta (we had rotini and penne on hand)

Directions
This is a very easy 1-pot-meal to assemble, in just a few steps you will have a delicious meal.
Step 1: Add the olive oil to a dutch oven or stock pot and begin sautéing on medium-to low heat, the salami, ham, red pepper, tomato, zucchini, garlic, parsley until onions are translucent and pepper is soft. Season with pepper to taste. This should be about 5-10minutes.
Step 2: Add the crushed tomatoes, hot peppers and their juice, and Romano cheese; simmer on low to melt the cheese and blend all the ingredients. This should take you 5-10more minutes.
Step 3: Cook your pasta according to package.
Step 4: Eat. Place your macaroni in a bowl and top with the Italian Deli Meat Sauce, garnish with Romano cheese. 😋
