Hi, welcome and thank you for reading my first post. I am very excited to start the Wendy’s Kitchen series, an idea that has been on my mind for some time. Please join me as I closeout one chapter in my life (retire), wink, and begin a new chapter through this amazing story of life.
I like to think that my passion for food, gardening and flowers comes from a long line of grandparents who were farmers and gardeners that relied on their harvest to make it through our upstate New York winters. I spent countless hours reading their cookbooks gifted to me, as well as new cookbooks, professional chefs and TV cooking shows. If you were to stop in and say hello, you would see the American Test Kitchen, the Jamie Oliver network or This Old House running in the background.
My gift to you, is to share my passion for food, recipes that inspire me, and pictures of my garden vegetables, flowers, etc... My wish is that you are inspired to create something new and in return share with me.
Back to oh, yes, the Pickled Eggs…
This week a very good friend gifted my husband and I 2 dozen farm fresh eggs. My inspiration came from homemade Mixed Pickling Spices on hand, recipe will follow the Pickled Eggs.
Recipe for Gallon Jar (you could easily fit more eggs; this is what I had on hand)
Ingredients
24 eggs (2 dozen)
6 cups of white vinegar
2 cups of water (I prefer the 1 to 3 ratio)
1/4 cup of Mixed Pickling Spices * added 3 whole bay leaves.
2 tablespoons of crushed red pepper flakes (I like it hot) add to your taste.
1 tablespoon of pickling salt (I use Morten Canning & Pickling Salt)
3 cloves of garlic (more or less to your taste, I used dried cloves from last year’s garden)

Boil your eggs, the method I use, is to start in a cold pan with cold water to cover the top. Do not crowd your eggs, I boiled in two batches. Bring pot to boil and boil for 8 minutes for firm egg yolks. There are many other methods you can search how to boil an egg on the internet; How to Boil an Egg.
Sterilize your jar. An easy method is to wash your jar in your dishwasher, then use immediately. I have also boiled my jars in a large pot of water on the stove. Steps to sterilize canning jars.
Add your pickling spice, salt, crushed red pepper and eggs to your clean sterilized jar. Boil your water and vinegar mixture for 5 minutes, then poor over the eggs in the jar and cover. Cool at room temperature. Place cool jar in refrigerator and store for 7 days before enjoying.
