A quick easy meal after you spend hours in the garden, grin.
What a beautiful day yesterday in Upstate, New York. Mid-April with full sun and mid-60’s is just perfect to begin to prepare your vegetable garden after a long winter rest. Every year the lawn tries to creep in and steal my veggies. Every year I have to push it back and edge. It’s work, but so rewarding afterwards. I just love it.
After a day in the sun, and playing in the dirt, I have little energy except for something simple and a glass of wine. Fortunately, as I was spring cleaning my garden, I was able to pull out two frozen skinless 4 oz salmon fillets. What a treat for me. Not so much for my hubby, so I heated up the Turkey Goulash. He loved it, Goulash is always better the next day or so. Yum!
As Norah Jones pipes through Alexa, I am relaxing, sipping on herb tea (flavor is licorice - Throat Care) and writing. In a few minutes I am going to create some flatbread for girl’s wine night tonight. Anther yum, grin.
