So, fitting as I finalize this post, don’t you think, grin.
Rhubarb Pie: for me it reminds me of my grandparent’s home, warm, cozy, safe and always something sweet on the menu. A veggie that was always in my grandparent’s backyard, hanging out with the fence post, tucked in with other garden perennials.
Rhubarb is that quirky veggie that’s tart, possibly originating from England and Scandinavia. You can use Rhubarb as a fruit because of its tart taste. The plant leaf stalks can be eaten raw. I used to eat them from the garden when I was younger, it makes your mouth pucker.
Most of the recipes that I found as I dug into my grandmother’s and mother-in-law’s cookbooks baked Rhubarb with sugar to cut the tartness. None of their recipes included strawberries as an ingredien…
