Invited to a Taco Tuesday party—what do you bring? Salsa of course, grin.
Hi, I am hoping everyone is enjoying August. I sure am. What beautiful weather, after crazy storms and ragging heat. It’s that time of year to slow down, things look tired, but what comes next is my favorite time of year—Fall. Let’s not rush it though, grin.
Why Flash Salsa
Well because this recipe is going to be a flash to make, and you get the benefit of me not rambling on—sharing some crazy story. Today is all about the fun on a Taco Tuesday themed party night. For those who are waiting for a few recipes; Turkey Star Meat Sauce & Blackberry Lime Scones; they are coming I promise, they are currently in my head & notebook, soon to be on Substack, smile.
The why salsa? it’s truly about the fresh ingredients. I have written and posted about salsa before, my why is always the freshness. There is something very tasty about being able to pluck a tomato, pepper, and cilantro right off the plant. Then grab fresh hanging garlic and an onion, bring them indoors and create! Mouth watering.
Here’s the How—You can too!
Garden Fresh Salsa
yields-1quart size jar
Ingredients
9 Roma Tomatoes deseeded, chopped bite size
2-3 Beefsteak Tomatoes deseeded, chopped bite size
1 medium size red onion, finely diced
2 Hungarian Hot Wax peppers, finely diced
2 cloves of garlic, finely diced
2 jalapeños, finely diced
1/4 cup of fresh cilantro, diced
1 tablespoon of cumin
3 limes juiced
2-3 teaspoons of salt (tomatoes love salt) but taste as you go
Freshly ground pepper to taste
Olive oil to finish—about 2-3 teaspoons, optional
Directions
Add all the tomatoes, red onion, hot peppers, cilantro, garlic to a medium bowl, then add your cumin, freshly squeezed lime juice (fresh is best) and begin with 1 teaspoon of salt & pepper (remember your taste buds know best), stir to combine. I did need to add more salt. This brought out the brightness of the flavors, especially the tomatoes. I usually finish my salsa off with a little extra virgin olive oil. I believe it adds a little richness to the dish.
Refrigerate for about 1 hour to let all the flavors blend together. If you do finish with olive oil, you just want to leave it out for about 30 minutes before you enjoy, as the olive oil does become thick in the refrigerator. That’s it, easy! Enjoy with some lime chips, a favorite of mine.
Swap out and create your own version!
Don’t like it Hot—not a worry! Swap the Hungarian Hot Wax pepper with a green pepper. Tomatoes—use your favorite tomatoes. My ingredients except for the limes and cumin were from my garden. No need to have a garden—venture to a local Farm Stand or Market—you will be glad you did.

Looks like an incredible and delicious salsa Wendy. I have not tried Hungarian Hot Wax peppers before but they sounds interesting. On a scale of 1 -5 with 1 being a bell pepper and 5 being an inferno, what would you rate the spiciness of those hot wax peppers?
